The Lan Zhou pulled noodle, now with over 160 years of history, was orginally a special dish that the Chinese nomadic peoples of the Northwest would serve to guests of higher status. The broth is crystal clear and densely fragrant, with the cean white of radish, the red of chili oil, touches of fresh green garnish, and your choice of meat, chicken, or vegetable.
